Ingredients
- 3 cups all purpose flour
- 1 ½ teaspoon salt
- 9 eggs
- 2 ½ cups Half & Half
- Stick of butter
Note: Ingredients should be at room temperature.
Directions
- Place tab of butter into each popover cup.
- Pre-heat oven to 450° F with popover pans inside.
- Mix flour and salt together.
- Whisk eggs and milk together.
- Gradually add the salted flour to the eggs & milk whisking constantly. Batter should be very runny and mostly smooth — consistency of heavy cream.
- When oven is heated, brush popover cup sides and tops with the melted butter.
- Fill cups 2/3 way. Bake for 20-25 minutes until popped and golden brown.
Chef’s Notes
Forgot to take out the ingredients? You can fast track getting them to room temperature by placing the eggs in hot water for about 10-15 min. Microwave the cream for 1 minute on 50% power.
