Servings: 16 cupcakes or 50 mini-cupcakes
Ingredients
- Cupcakes
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp ground cinnamon
- ¼ cup whole milk
- ¼ cup full-fat sour cream
- ½ cup (1 stick) unsalted butter, softened
- ½ cup granulated sugar
- ½ cup light-brown sugar
- 1 tsp vanilla extract (or to taste)
- 2 large eggs
- 1 large egg yolk
- ½ cup (strong) coffee
- Frosting
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract (or to taste)
- 2 tbsp Irish whiskey (ideally Clontarf 1014)
- Pinch of salt
- ½ tsp ground cinnamon
Directions
- Cupcakes:
- Preheat oven to 350° F and line cupcake pan with paper liners
- In a large bowl, combine the flour, baking powder, salt, and cinnamon
- In a small bowl, mix together milk and sour cream
- In another large bowl, beat the butter and both sugars together until light and fluffy (be patient it will take a few minutes)
- Add the vanilla extract
- Then, one at a time, mix in the eggs and egg yolk, beating well after each
- Gradually add in the flour mixture and the sour cream and milk mixture, alternating between each (start and finish with the flour mixture)
- Lastly, stir in the hot coffee and mix until combined
- Fill prepared cupcake liners ¾ of the way (for both full-sized and mini cupcakes). Bake for 20 minutes for full-sized cupcakes and 12-15 minutes for mini-cupcakes, or until you can insert a toothpick and it comes out clean (I always recommend setting your timer on the lower end especially since you have a smaller margin for error with mini-cupcakes)
- Frosting:
- In a large bowl, use an electric mixer (handheld or standing) to beat butter until smooth
- Gradually mix in powdered sugar, one cup at a time (it will look clumpy, but don’t worry)
- Add in the vanilla extract, Irish whiskey, and salt, beat until light and fluffy
- Frost as you please. You can also sprinkle them with cinnamon for added decoration
