Irish Coffee Cupcakes

Servings: 16 cupcakes or 50 mini-cupcakes

Ingredients

  • Cupcakes
    • 2 cups all-purpose flour
    • 1 tsp baking powder
    • ½ tsp salt 
    • ½ tsp ground cinnamon 
    • ¼ cup whole milk
    • ¼ cup full-fat sour cream
    • ½ cup (1 stick) unsalted butter, softened
    • ½ cup granulated sugar
    • ½ cup light-brown sugar
    • 1 tsp vanilla extract (or to taste)
    • 2 large eggs 
    • 1 large egg yolk
    • ½ cup (strong) coffee
  • Frosting
    • 1 cup (2 sticks) unsalted butter, softened
    • 4 cups powdered sugar 
    • 2 tsp vanilla extract (or to taste)
    • 2 tbsp Irish whiskey (ideally Clontarf 1014)
    • Pinch of salt
    • ½ tsp ground cinnamon

Directions

  • Cupcakes:
    • Preheat oven to 350° F and line cupcake pan with paper liners
    • In a large bowl, combine the flour, baking powder, salt, and cinnamon 
    • In a small bowl, mix together milk and sour cream 
    • In another large bowl, beat the butter and both sugars together until light and fluffy (be patient it will take a few minutes)
    • Add the vanilla extract
    • Then, one at a time, mix in the eggs and egg yolk, beating well after each
    • Gradually add in the flour mixture and the sour cream and milk mixture, alternating between each (start and finish with the flour mixture)
    • Lastly, stir in the hot coffee and mix until combined
    • Fill prepared cupcake liners ¾ of the way (for both full-sized and mini cupcakes). Bake for 20 minutes for full-sized cupcakes and 12-15 minutes for mini-cupcakes, or until you can insert a toothpick and it comes out clean (I always recommend setting your timer on the lower end especially since you have a smaller margin for error with mini-cupcakes)
  • Frosting:
    • In a large bowl, use an electric mixer (handheld or standing) to beat butter until smooth 
    • Gradually mix in powdered sugar, one cup at a time (it will look clumpy, but don’t worry)
    • Add in the vanilla extract, Irish whiskey, and salt, beat until light and fluffy 
    • Frost as you please. You can also sprinkle them with cinnamon for added decoration
