By Chef Andrew

Servings: 4-6

Ingredients

  • 1 cup + 2 tbsp lukewarm water
  • 2 tbsp granulated sugar
  • 3 cups bread flour
  • 1 tsp salt
  • 1 ½ tsp yeast, ideally bread machine variety unless kneading by hand
  • Honey to taste
  • 1 egg, beaten
  • Toppings of choice (poppy, sesame, everything mix, etc.)

Directions

  • Combine all ingredients in bread machine*
  • Run on dough cycle
  • Rest for 1 hour
  • Divide dough into 4-6 balls depending on desired bagel size
  • Slightly flatten and create hole in each with thumb
  • Rest another hour
  • Pre-heat oven to 400° F
  • Boil large pot of water and stir in a healthy squirt of honey
  • Boil bagels for 1 minute per side, flipping with spoon
  • Remove bagels to greased baking sheet
  • Coat bagels with egg wash
  • Sprinkle all sides with desired toppings
  • Bake for 25 minutes rotating tray halfway through
  • Remove, cool, and enjoy!

Chef’s Notes

  • If bread machine is not available, use regular active dry yeast and increase by ½ tsp then knead by hand. After the dough has been kneaded, let it rise for 60-90 minutes and then punch it down before splitting into balls.
