Greek Pita Bread

Ingredients

  • 420g flour (divided: 150g /270g)
  • 7g active yeast
  • 250 ml lukewarm water 
  • 10g salt
  • 2 tbsp olive oil

Directions

  • Combine 150g flour, yeast, and water in a standing mixer with whisk attachment – speed 1
  • Cover bowl with towel and rest 10 minutes
  • Add additional 270g flour, salt, and olive oil
  • Switch to dough hook
  • Knead for 5 minutes – speed 2
  • Cover bowl with towel and rest 2 hours
  • Cut into 8 equal pieces
  • Stretch and fold into balls
  • Brush with olive oil
  • Rest for 30 minutes
  • Roll out and cook on skillet
  • Enjoy!
